Not your average buttered noodles!

-2 large carrots, shredded
-1 can of black beans, rinsed
-1 yellow pepper, diced
-1 cup of onion, diced
Dressing: 
-2 tbsp of Ghee 
-3 tbsp of lemon juice
-2 Garlic cloves, minced 
- salt and pepper 

On top and at the end: 
-1 pinch of mozzarella cheese

Directions to make this delicious dish: 
- melt the ghee, medium heat
-throw in all the veggies and beans 
-squeeze lemon juice, put salt and pepper 
-mince the garlic 
- cook carrots to the point where they are warmed and still have their crunch 
-throw a punch of mozzarella 

Then BAM, you have a filling  healthier pasta alternative!
